Mung bean

Micro mung bean – fresh, crunchy and different
Mung bean microgreens are a great choice if you are looking for a microgreen with a denser texture and a distinctive freshness. They have tender leaves and juicy stems that add a pleasant crunch to dishes.
Benefits
Mung bean microgreens are a source of plant protein, dietary fibre, vitamin C and folate (USDA FoodData Central data for sprouted mung beans). A 2026 study comparing mung bean microgreens with sprouts found significantly more vitamin C and nearly twice the dietary fibre in the microgreens.
Vitamin C contributes to the normal function of the immune system and to the protection of cells from oxidative stress. Folate contributes to the reduction of tiredness and fatigue. Dietary fibre is an important part of a balanced diet.
Taste
Fresh, slightly sweet and mild, with a delicate bean and nutty note. Its strongest weapon is the texture – juicy and crunchy.
Where does it feel most at home?
Mung bean microgreens are wonderful in rice or quinoa bowls, Asian salads and dishes with roasted or steamed vegetables. Their crunch adds the contrast that soft and creamy components need.
They pair beautifully with avocado, sesame, carrots, cucumbers and spicy dressings, and also with eggs, hummus and creamy cheeses. You can also use them on toast or in a sandwich when you want more freshness and texture.
Our little trick: if you love Asian cuisine, start with mung bean microgreens. That is where they feel most at home.
The plants are ready about 7 days after sowing.
